1/4 CUP ALL PURPOSE FLOUR
3 CUPS CHICKEN BROTH
3 CUPS OF MILK
1 POUND SHREDDED CHEDDAR CHEESE(ABOUT 4CUPS)
3 PUMPERNICKEL-BREAD SLICES,TOASTED AND CUT INTO CUBES
1.IN A 3 QUART SAUCEPAN OVER MEDIUM -HEAT,ADD BUTTER AND COOK ONION
UNTILL TENDER,ABOUT 5 MINUTES.STIR IN FLOYR AND COOK UNTILL FLOUR HAS
BLENDED WITH ONION MIXTURE.
2.ADD CHICKEN BROTH;COOK,STIRRING CONSTANTLY,UNTILL MIXTURE IS SLIGHTLY
THICKENED.ADD MILK AND HEAT JUST TO BOILING,STIRRING CONSTANTLY.
3.IN COVERED BLENDER CONTAINER AT MEDIUM SPEED,BLEND 1/4 MILK MIXTURE
AT A TIME UNTILL SMOOTH.RETURN TO SAUCEPAN AND,OVER MEDIUM HEAT, HEAT
JUST TO BOILING; REMOVE FROM HEAT.
4.WITH WIRE WISK OR SLOTTED SPOON,STIR IN CHEESE UNTILL MELTED.IF CHEESE
DOES NOT MELT COMPLETLY,COOK OVER VERY LOW HEAT ABOUT 1
MINUTE,STIRRING THE SOUP CONSTANTLY.
5.SERVE WITH PUMPERNICKEL CUBES.
